- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing them until translucent and fragrant.
- Next, add the cubed chicken breast to the pot. Allow it to cook until browned on all sides, approximately 5-7 minutes.
- Once the chicken is browned, stir in the chopped carrots, parsnips, and any other seasonal root vegetables you have chosen.
- Pour in the chicken broth, bringing the mixture to a gentle boil. Add the thyme, rosemary, salt, and pepper. Stir gently to combine all the ingredients thoroughly.
- Reduce the heat to low, cover the pot, and let the stew simmer for about 30 minutes.
- After thirty minutes, check the vegetables for doneness. If they are tender, your stew is ready to serve.
- Ladle the healthy chicken stew into bowls and enjoy hot, either by itself or with some delicious sides.
Notes
