Preparation
- Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Set aside.
- In a skillet over medium heat, add olive oil. Sauté the chopped onion and minced garlic for 2-3 minutes until soft.
Cooking the Filling
- Add the ground beef to the skillet, breaking it apart as it cooks. Stir frequently until fully browned. Drain excess fat.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, and salt and pepper. Let the mixture simmer for a few minutes to combine flavors.
Assembly
- Stuff the prepared mixture tightly into each bell pepper and pack down gently.
Baking
- Place stuffed peppers in a baking dish, adding a splash of water to the bottom. Cover with foil and bake for 25-30 minutes until tender.
- If using cheese, remove foil, sprinkle cheese on top, and bake uncovered for an additional 5-10 minutes until melted.
Serving
- Carefully remove the stuffed peppers from the oven. Let cool for a few minutes before serving.
Notes
Serve with a mixed green salad or roasted vegetables for a complete meal. Store in the fridge for up to 4 days or freeze for up to 3 months.
