- In a small bowl, whisk together tahini and lemon juice, adding warm water if needed for desired consistency.
Assembly
- Once the quinoa and chickpeas are fully cooked, assemble the bowl starting with quinoa as a base.
- Top with roasted chickpeas, fresh vegetables, and drizzle with tahini sauce. Finish with fresh herbs.
