  1. Begin by gathering all your ingredients. Shred the carrots and the apple using a box grater or a food processor. If you're using nuts, chop them finely so they mix well into the salad.
  2. In a large bowl, combine the shredded carrots, shredded apple, and dried cranberries. Stir them together to ensure even distribution.
  3. In a separate small bowl, whisk together the Greek yogurt (or mayonnaise), honey, lemon juice, salt, and pepper until smooth. Taste and adjust the seasonings if necessary.
  4. Pour the dressing over the salad mixture. Gently toss everything together until the carrots and apples are evenly coated.
  5. If you're using nuts, sprinkle them on top of the salad. Toss the salad lightly again to distribute the nuts without breaking them.
