  • 3 pieces ripe bananas Select bananas that are speckled with brown spots for optimal sweetness.
  • 1 cup whole wheat flour Can substitute with all-purpose flour for a lighter texture.
  • 1/2 cup unsweetened applesauce Can swap with yogurt for a creamier batter.
  • 1/4 cup honey or maple syrup Optional for added sweetness, can replace with stevia or agave nectar.
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon Can be replaced with nutmeg or allspice.
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips Optional, can use dried fruits like raisins or cranberries.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the applesauce, and optional sweetener, and vanilla extract to the mashed bananas, mixing well.
  4. In a separate bowl, mix the whole wheat flour, baking soda, cinnamon, and salt.
  5. Gradually combine the dry ingredients with the wet mixture, stirring until just combined without overmixing.
  6. Fold in the optional chopped nuts or chocolate chips.
  7. Transfer the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Serve with low-fat vanilla ice cream, whipped cream, or alongside tea/coffee. Keep in an airtight container for up to 5 days in the fridge, or freeze slices for up to 3 months.
