  • 1 pound ground beef Choose quality cuts like ground chuck
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth Use low-sodium if desired
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning Adjust to taste if concerned about salt
  • 1 cup corn (optional) Add for sweetness and texture
  • to taste salt and pepper
Toppings
  • cheese Shredded (optional)
  • sour cream Optional for serving
  • cilantro Fresh, for garnish
  • avocado Sliced, for topping

Method
 

Preparation
  1. In a large pot, place the ground beef over medium heat. Cook until browned, about 5-7 minutes. Break apart as it cooks, then drain excess fat.
  2. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent and the garlic is fragrant.
Cooking
  1. Stir in the black beans, diced tomatoes, beef broth, and taco seasoning. Mix well.
  2. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
  3. If using corn, stir it in and cook for an additional 5 minutes.
  4. Season with salt and pepper to taste before serving.
Serving
  1. Serve hot, allowing each person to add their desired toppings.

Notes

Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat on the stovetop or in the microwave.
