Preparation
- In a large pot, place the ground beef over medium heat. Cook until browned, about 5-7 minutes. Break apart as it cooks, then drain excess fat.
- Add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent and the garlic is fragrant.
Cooking
- Stir in the black beans, diced tomatoes, beef broth, and taco seasoning. Mix well.
- Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
- If using corn, stir it in and cook for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
Serving
- Serve hot, allowing each person to add their desired toppings.
Notes
Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat on the stovetop or in the microwave.
