Preparation
- Preheat your oven to 400°F (200°C).
- Wash the russet potatoes thoroughly and poke a few holes in each with a fork. Bake for about an hour, or until tender.
- Set the baked potatoes aside to cool slightly.
Cooking
- Cook the bacon in a large pot over medium heat until crispy, about 5-7 minutes. Remove the bacon and crumble it, leaving the drippings in the pot.
- Sauté the chopped onion and minced garlic in the bacon drippings over medium heat until the onion is soft and translucent, about 3-5 minutes.
- Peel the cooled potatoes and cut them into chunks. Add the potatoes and chicken broth to the pot, and bring to a gentle simmer.
- Mash some of the potato chunks directly in the pot for a thicker texture, but leave some pieces whole.
- Stir in the heavy cream and half of the cheddar cheese, mixing until combined and heated through, about 5 minutes.
- Season to taste with salt and pepper.
- Ladle soup into bowls and top with crumbled bacon, remaining cheddar cheese, and chopped green onions.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for 2-3 months. Reheat on the stovetop or microwave.
