  • 1 lb minced beef Aim for 80% lean for best flavor.
  • 2 large sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth Make it vegetarian by using vegetable broth.
  • 1 can diced tomatoes Drain excess liquid if using canned tomatoes.
  • 1 cup carrots, sliced
  • 1 cup green beans, chopped Add towards the end to retain crunch.
  • 1 tsp paprika Feel free to adjust seasoning according to taste.
  • Salt and pepper to taste
  • Fresh parsley for garnish Try thyme or cilantro as an alternative.

Preparation
  1. In a large pot over medium heat, add the minced beef. Cook until it’s fully browned. If there’s excess fat, drain it carefully to leave just enough for flavor.
  2. Next, add the chopped onion and minced garlic to the pot. Sauté them together until the onion is translucent, about 3-4 minutes.
  3. Stir in the cubed sweet potatoes, sliced carrots, and chopped green beans. Mix well for even cooking.
  4. Pour in the beef broth and the can of diced tomatoes, juice included. Stir everything together.
  5. Sprinkle in the paprika and season with salt and pepper to taste. Stir well.
  6. Bring the mixture to a gentle boil. Cover and let the soup simmer for about 30 minutes, or until all vegetables are tender.
  7. Taste the soup and adjust seasoning if needed, adding more salt, pepper, or paprika according to your preference.
  8. Ladle the soup into bowls and garnish with fresh parsley. Serve hot.

Notes

This soup can be stored in the fridge for 3-4 days or frozen for up to 3 months. It pairs well with crusty bread or a simple salad.
