- In a large pot over medium heat, add the minced beef. Cook until it’s fully browned. If there’s excess fat, drain it carefully to leave just enough for flavor.
- Next, add the chopped onion and minced garlic to the pot. Sauté them together until the onion is translucent, about 3-4 minutes.
- Stir in the cubed sweet potatoes, sliced carrots, and chopped green beans. Mix well for even cooking.
- Pour in the beef broth and the can of diced tomatoes, juice included. Stir everything together.
- Sprinkle in the paprika and season with salt and pepper to taste. Stir well.
- Bring the mixture to a gentle boil. Cover and let the soup simmer for about 30 minutes, or until all vegetables are tender.
- Taste the soup and adjust seasoning if needed, adding more salt, pepper, or paprika according to your preference.
- Ladle the soup into bowls and garnish with fresh parsley. Serve hot.

This soup can be stored in the fridge for 3-4 days or frozen for up to 3 months. It pairs well with crusty bread or a simple salad.
