Preparation
- Preheat your oven to 400°F (200°C). Chop the cauliflower into bite-sized florets.
Roasting Cauliflower
- Toss the chopped cauliflower with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for about 25 minutes, until lightly browned and tender.
Sautéing Onion
- In a large pot, add a bit of olive oil and sauté the chopped onion over medium heat until translucent, about 5 minutes.
Cooking Potatoes
- Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer. Cook until the potatoes are tender, about 15 minutes.
Combining Ingredients
- Once the potatoes are tender, add the roasted cauliflower to the pot and stir gently to combine.
Blending the Soup
- Use an immersion blender to puree the soup to desired consistency, or transfer batches to a regular blender and return it to the pot.
Stirring in Cheese
- Stir in the shredded cheddar cheese until melted completely into the soup.
Seasoning
- Season the soup with garlic powder and thyme if using. Adjust salt and pepper to taste.
Serving
- Ladle the soup into bowls and serve hot, perfect for any meal or gathering.
Notes
This soup can be stored in the fridge for up to five days in an airtight container, or frozen for up to three months. Reheat gently on the stovetop or in the microwave.
