  • 1 lb boneless skinless chicken breast Best if breasts are of similar size for even cooking.
  • 2 tbsp olive oil, divided Use 1 tablespoon for seasoning and 1 for drizzling at the end.
  • 1 tsp smoked paprika Provides bold flavor.
  • 1/2 tsp garlic powder
  • to taste salt and black pepper Ensure chicken is well-seasoned.
For the Bowl
  • 1 cup quinoa, rinsed Rinsing prevents quinoa from turning mushy.
  • 2 cups low-sodium chicken broth Can substitute with vegetable broth for a lighter dish.
  • 1.5 cups broccoli florets Can steam or roast.
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, sliced Add fresh before serving to prevent browning.
  • 2 tbsp fresh lemon juice Brightens the flavors of the bowl.
  • 2 tbsp fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Start by coating the chicken breasts with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and black pepper. Let it sit for a few minutes if possible.
  2. Combine the rinsed quinoa and chicken broth in a saucepan. Bring to a boil, lower the heat, cover the pan, and simmer for 15 minutes or until the liquid is absorbed.
  3. Meanwhile, steam or roast the broccoli florets until crisp-tender, about 5 minutes.
Cooking the Chicken
  1. Heat a skillet over medium-high heat and cook the chicken for 6 to 7 minutes per side until the internal temperature reaches 165°F. Rest for 5 minutes before slicing.
Assemble the Bowls
  1. Divide the cooked quinoa among four bowls. Top with sliced chicken, broccoli, cherry tomatoes, and avocado slices.
  2. Drizzle the bowls with the remaining olive oil and fresh lemon juice, then garnish with chopped parsley. Serve warm.

For meal prep, store components separately to maintain freshness. Avoid adding avocado too early to leftovers as it browns quickly.
