- Line an 8x8-inch baking pan with parchment paper, allowing paper to hang over two opposite sides.
- In a large bowl, combine creamy peanut butter and honey, stirring until smooth. Microwave for about 20 seconds if peanut butter is too thick.
- Add rolled oats, vanilla protein powder, and kosher salt to the peanut butter mixture. Stir until fully combined, ensuring no dry patches remain.
- Press the oat and peanut butter mixture into the prepared pan evenly and firmly.
- In a microwave-safe bowl, melt dark chocolate chips with 1 tablespoon of creamy peanut butter in 20-second bursts, stirring until smooth.
- Pour the chocolate topping over the base layer and spread it evenly. Sprinkle flaky sea salt on top.
- Chill in the refrigerator for at least 1 hour until fully set.
- Lift the bars out using the parchment overhang and slice into 12 equal pieces. Store in an airtight container.
Notes
These bars keep well in the fridge for up to 2 weeks and can be frozen for up to 3 months. Perfect for make-ahead snacks!
