Method
Cooking the Pasta
- Bring a large pot of salted water to a boil. Add 12 ounces of penne pasta and cook according to package directions until al dente.
- Before draining, reserve 1/4 cup of the pasta water. Drain the pasta and set it aside.
Blending the Sauce
- While the pasta cooks, combine 1.5 cups cottage cheese, 0.5 cup grated Parmesan, 3 cloves minced garlic, 0.5 tsp salt, 0.25 tsp black pepper, and 0.25 tsp nutmeg in a blender. Blend until smooth.
Warming the Sauce
- In a skillet, melt 1 tbsp unsalted butter over medium heat. Pour in the blended sauce and warm gently for 2 to 3 minutes without boiling.
Combining Pasta and Sauce
- Add the drained pasta to the skillet with the sauce. Toss to coat evenly.
- Gradually add reserved pasta water, one tablespoon at a time, until the sauce is silky.
Serving
- Transfer the pasta to plates or a serving dish. Garnish with parsley and sprinkle more Parmesan on top. Serve immediately.
Storing Leftovers
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on low heat with a splash of milk.
Notes
This recipe is versatile and can be customized with different herbs or spices. To ensure a smooth sauce, don't allow it to boil and add pasta water gradually.
