  • 12 oz penne pasta A great shape for holding sauce.
  • 1.5 cups full-fat cottage cheese Provides creaminess and extra protein.
  • 0.5 cup grated Parmesan cheese Add more for serving.
  • 3 cloves garlic, minced Brings a gentle pungency.
  • 1 tbsp unsalted butter Helps warm the sauce evenly.
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 0.25 tsp ground nutmeg Adds a cozy spice.
  • 1 tbsp fresh parsley, chopped For garnish.
  • 0.25 cup reserved pasta water Key for creamy sauce consistency.

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add 12 ounces of penne pasta and cook according to package directions until al dente.
  2. Before draining, reserve 1/4 cup of the pasta water. Drain the pasta and set it aside.
Blending the Sauce
  1. While the pasta cooks, combine 1.5 cups cottage cheese, 0.5 cup grated Parmesan, 3 cloves minced garlic, 0.5 tsp salt, 0.25 tsp black pepper, and 0.25 tsp nutmeg in a blender. Blend until smooth.
Warming the Sauce
  1. In a skillet, melt 1 tbsp unsalted butter over medium heat. Pour in the blended sauce and warm gently for 2 to 3 minutes without boiling.
Combining Pasta and Sauce
  1. Add the drained pasta to the skillet with the sauce. Toss to coat evenly.
  2. Gradually add reserved pasta water, one tablespoon at a time, until the sauce is silky.
Serving
  1. Transfer the pasta to plates or a serving dish. Garnish with parsley and sprinkle more Parmesan on top. Serve immediately.
Storing Leftovers
  1. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on low heat with a splash of milk.

Notes

This recipe is versatile and can be customized with different herbs or spices. To ensure a smooth sauce, don't allow it to boil and add pasta water gradually.
