Preparation
- Heat a nonstick skillet over medium heat and lightly coat it with cooking spray.
- Pour in the liquid egg whites, then sprinkle with kosher salt and black pepper.
- Let the egg whites cook undisturbed for about one minute until the edges just begin to set.
Cooking
- Once the egg whites start to set around the edges, add the cooked and crumbled turkey breakfast sausage and chopped fresh spinach.
- Gently scramble everything together for about 3 to 4 minutes until fully cooked and the spinach wilts but remains bright green.
- Sprinkle the shredded reduced-fat cheddar cheese evenly over the scrambled egg mixture and let it melt off the heat for about one minute.
Assembling
- Warm each whole wheat tortilla in a dry skillet or microwave until soft and pliable.
- Divide the cooked egg, sausage, spinach, and cheese mixture evenly among the warmed tortillas.
- Fold in the sides of each tortilla, then roll tightly from one end to the other.
Serving
- Serve your wraps immediately with a side of fresh salsa or wrap them tightly in foil for storage.
- If storing, refrigerate the wraps for up to 3 days and reheat wrapped in a damp paper towel.
Notes
