High Protein Egg White Turkey Wrap

A warm and filling breakfast wrap packed with protein from egg whites and turkey sausage, fresh spinach, and melted cheese, all wrapped in a whole wheat tortilla.

  • 1.5 cups liquid egg whites A clean source of protein without added fat.
  • 4 oz cooked, crumbled turkey breakfast sausage Look for seasoned options for convenience.
  • 1/2 cup fresh spinach, chopped Adds vitamins and a mild taste.
  • 1/4 cup shredded reduced-fat cheddar cheese Melted for creamy goodness.
  • 4 whole wheat tortillas whole wheat tortillas Fiber-rich base for wraps.
  • 1/2 tsp kosher salt For seasoning.
  • 1/4 tsp black pepper For seasoning.
  • cooking spray To keep the skillet light and nonstick.
  • salsa, for serving Optional, for a zesty finish.

Method
 

Preparation
  1. Heat a nonstick skillet over medium heat and lightly coat it with cooking spray.
  2. Pour in the liquid egg whites, then sprinkle with kosher salt and black pepper.
  3. Let the egg whites cook undisturbed for about one minute until the edges just begin to set.
Cooking
  1. Once the egg whites start to set around the edges, add the cooked and crumbled turkey breakfast sausage and chopped fresh spinach.
  2. Gently scramble everything together for about 3 to 4 minutes until fully cooked and the spinach wilts but remains bright green.
  3. Sprinkle the shredded reduced-fat cheddar cheese evenly over the scrambled egg mixture and let it melt off the heat for about one minute.
Assembling
  1. Warm each whole wheat tortilla in a dry skillet or microwave until soft and pliable.
  2. Divide the cooked egg, sausage, spinach, and cheese mixture evenly among the warmed tortillas.
  3. Fold in the sides of each tortilla, then roll tightly from one end to the other.
Serving
  1. Serve your wraps immediately with a side of fresh salsa or wrap them tightly in foil for storage.
  2. If storing, refrigerate the wraps for up to 3 days and reheat wrapped in a damp paper towel.

Notes

This wrap is great for meal prep and can be refrigerated or frozen for later use. Watch out for overcooking the egg whites and seasoning to taste.
