For the Blueberry Mixture
  • 2 cups fresh blueberries Look for firm, plump, and deep blue berries.
  • 1/2 cup sugar Used to sweeten the blueberry mixture.
  • 1 tablespoon lemon juice Brightens the flavor.
  • 1 teaspoon vanilla extract adds warmth to the flavor profile.
For the Cobbler Base
  • 1 cup all-purpose flour
  • 1/2 cup sugar Remaining sugar for the batter.
  • 2 teaspoons baking powder Leavening agent for the batter.
  • 1/2 teaspoon salt
  • 1 cup milk Can substitute with almond milk or oat milk.
  • 1/2 cup butter, melted Can substitute with coconut oil for dairy-free.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix together blueberries, 1/2 cup sugar, lemon juice, and vanilla extract. Pour into the greased baking dish.
  3. In another bowl, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt.
  4. Gradually stir in milk and melted butter into the dry mixture until just combined.
  5. Pour the batter over the blueberry mixture, spreading it evenly.
Baking
  1. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown.
  2. Let it cool slightly before serving warm.

Notes

This cobbler pairs beautifully with vanilla ice cream or whipped cream. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
