Preparation
- Warm the milk until it feels lukewarm, then stir in the yeast and sugar. Let sit for 5-10 minutes until frothy.
- In a large bowl, combine all-purpose flour, salt, and baking soda. Make a well in the center.
- Pour the yeast mixture and melted butter into the well. Stir until a soft dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for about an hour until doubled.
Shaping and Cooking
- Gently punch down the dough and roll out to 1/2 inch thick. Cut out rounds using a biscuit cutter.
- Place rounds on a surface dusted with cornmeal and let rise for another 30 minutes.
- Preheat skillet over medium-low heat. Cook muffins for 5-7 minutes on each side until golden.
- Cool slightly, then split and toast before serving.
Notes
For best results, warm the milk properly and do not skip the kneading step. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
