  • 8 pieces bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes, optional Adjust based on preference.
  • 1 teaspoon toasted sesame seeds, for garnish
  • 2 pieces green onions, thinly sliced, for garnish
  • Salt and black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Pat the chicken thighs dry with paper towels to remove excess moisture.
  3. Season both sides of the chicken with salt and black pepper to taste.
Cooking
  1. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
  2. Once hot, place the chicken thighs skin-side down in the skillet and sear for 4-5 minutes until golden brown.
  3. Flip the thighs and sear for an additional 2 minutes before removing the skillet from the heat.
  4. In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, grated ginger, and red pepper flakes if using.
  5. Pour the honey garlic sauce over the chicken thighs in the skillet.
  6. Gently turn the thighs to coat in the sauce.
  7. Carefully transfer the skillet to the preheated oven and bake for 25-30 minutes, basting once halfway through.
  8. Ensure the chicken reaches an internal temperature of 165°F and the glaze is thick and sticky.
  9. Remove from the oven and let the chicken rest for 5 minutes.
  10. Garnish with toasted sesame seeds and sliced green onions.
Serving
  1. Serve the chicken warm, ideally over a bed of rice, spooning any extra sauce over the top.

Notes

Pat chicken dry before seasoning for crispier skin. Don't overcrowd the pan while searing, and allow resting time after baking for best juiciness.
