  • 1 lb Carrots Whole carrots sliced into sticks or thick coins.
  • 1/4 cup Honey The star of the glaze.
  • 2 tbsp Butter Makes the glaze silky.
  • 1 tbsp Olive oil Helps with even coating.
  • 1/2 tsp Salt Keeps the sweetness in check.
  • 1/4 tsp Black pepper Do not skip.
  • 1/2 tsp Garlic powder Optional; adds savory note.
  • 2 tbsp Fresh parsley Optional; for garnish.

Method
 

Preparation
  1. Preheat the oven to 400 F.
  2. Peel the carrots if desired, then cut them into even pieces.
  3. In a sheet pan, toss the carrots with olive oil, salt, pepper, and garlic powder (if using). Spread them out in a single layer.
Cooking
  1. Roast the carrots for 20 minutes, then give them a quick stir.
  2. In a small bowl, melt the butter and honey together. Pour it over the roasted carrots and toss right on the pan.
  3. Return the pan to the oven and roast for an additional 10 to 15 minutes until the carrots are tender and glossy with caramelized spots.
  4. Taste and adjust seasoning with more salt if necessary.
  5. Serve warm, sprinkled with fresh parsley if desired.

Notes

These carrots can be made ahead and reheated. Add a tiny splash of honey or a small knob of butter to restore shine before serving.
