Ingredients

Main Ingredients
  • 2 medium medium acorn squash, halved, seeded, and sliced into 1/2-inch thick half-moon rings
  • 3 tbsp unsalted butter, melted
  • 3 tbsp honey
  • 1 tbsp fresh thyme leaves
  • 3/4 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp ground cinnamon
  • 1/4 cup pecans, toasted and roughly chopped
  • flaky sea salt, for finishing

Method

Preparation
  1. Preheat the oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
  2. Place the acorn squash rings in a single layer on the prepared baking sheet, slight overlapping is fine.
  3. In a small bowl, whisk together melted butter, honey, thyme, salt, pepper, and cinnamon.
  4. Brush both sides of each squash ring generously with the honey butter mixture.
Roasting
  1. Roast the squash for 15 minutes, then flip each ring with tongs and brush with any remaining mixture.
  2. Continue roasting for another 15 to 20 minutes until deeply caramelized and fork-tender.
  3. Transfer the roasted squash to a serving platter, sprinkle with toasted chopped pecans and flaky sea salt, and serve warm.

Notes

Acorn squash is best chosen when it feels heavy with firm, dark green skin. Cut only 1/2-inch thick for even roasting. For best results, avoid crowding the baking sheet and keep an eye on the honey during roasting.
