  • 3 tbsp olive oil
  • 2 tbsp honey Can be substituted with maple syrup for a vegan option.
  • 1/2 cup crumbled feta Substitute with goat cheese if preferred.
  • 1/4 cup fresh dill, chopped Can be replaced with cilantro or parsley.
  • 1/4 cup fresh mint, chopped
  • 1/3 cup toasted almonds Substitute with pecans for a different crunch.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Halve the carrots lengthwise to ensure even roasting. Toss the carrots in a large bowl with olive oil, honey, salt, and pepper until well coated.
Roasting
  1. Spread the carrots in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes or until tender and caramelized.
Assembly
  1. Allow the carrots to cool slightly, then arrange them on a serving platter.
  2. Sprinkle crumbled feta over the roasted carrots, followed by toasted almonds.
  3. Finally, scatter fresh dill and mint over the top before serving.
Serving
  1. Serve the salad warm or at room temperature as a delightful side or main dish.

Notes

Monitor roasting time closely to avoid overcooking. Add feta just before serving for optimal texture. Cool carrots slightly before adding fresh herbs.
