Ingredients
  

Quesadilla Base
  • 4 large large burrito-size flour tortillas
  • 2.5 cups shredded Monterey Jack or Colby-Jack cheese Use freshly shredded for best melting.
  • 1 tablespoon unsalted butter, softened Plus more as needed for the skillet.
Optional Add-ins
  • 1 cup cooked shredded chicken For a heartier version.
  • 0.25 cups diced roasted red pepper For color accent.
For Serving
  • to taste salsa
  • to taste sour cream
  • to taste guacamole

Method
 

Preparation
  1. Lay out the 4 tortillas on a clean work surface. Cut simple jack-o’-lantern faces into the center of 2 tortillas.
  2. Spread a layer of shredded cheese over one whole tortilla, adding any optional add-ins.
  3. Top with the face-cut tortilla and press gently.
Cooking
  1. Heat a skillet over medium-low heat and lightly butter the outside of the assembled quesadilla.
  2. Cook for 3 to 4 minutes until golden brown and cheese starts to melt, flip, and cook another 3 to 4 minutes.
  3. Let the quesadilla rest for 1 to 2 minutes before slicing.
Serving
  1. Cut each quesadilla into wedges and serve warm with salsa, sour cream, and guacamole.

Notes

For a dairy-free option, use plant-based cheese and dairy-free sour cream. Store leftovers in an airtight container for up to 2 days, or freeze for up to 2 months.
