  • 4 medium Potatoes Waxy varieties like red or fingerling are best.
  • 1/4 cup Fresh dill, diced Can be swapped with parsley or chives.
  • 2 tablespoons Capers, rinsed and chopped Options include pickles or olives.
  • 3 tablespoons Olive oil Can substitute with avocado oil.
  • 2 tablespoons Lemon juice Can substitute with lime juice.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Freshly cracked for best flavor.

Method
 

Preparation
  1. Boil the potatoes in a large pot covered with water until tender, about 15-20 minutes. Drain and allow to cool.
  2. In a large bowl, combine diced dill, capers, olive oil, lemon juice, salt, and pepper. Whisk together until well blended.
  3. Once cool, chop the potatoes into bite-sized pieces.
  4. Gently fold the chopped potatoes into the dressing, ensuring they are coated evenly without breaking apart.
  5. Transfer the potato salad to a serving dish. Serve immediately or chill in the refrigerator for 30 minutes to enhance flavors.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended.
