Ingredients

For the base
  • 1 cup water
  • 1 cup honey or 1 1/2 cups sugar for a budget-friendly alternative
  • 1 pod vanilla bean split lengthwise, seeds scraped, pod included; or 1/2 tablespoon pure vanilla extract
  • 2 sticks cinnamon or 1/4 teaspoon ground cinnamon
  • 6 whole cloves or 1/8 teaspoon ground cloves
  • 1 inch fresh ginger scrubbed and sliced; or 1/3 teaspoon dried ginger
  • 1/2 teaspoon whole peppercorns or 1/4 teaspoon black pepper (optional)
  • 8 whole allspice berries or 1/8 teaspoon ground allspice
  • 1 peel lemon organic if possible, washed well
  • 1 peel orange organic if possible, washed well
  • 2 cups vodka plain, clean vodka preferred

Method

Preparation
  1. Put everything except the vodka into a medium saucepan.
  2. Bring it to a gentle simmer. Cover the pan and let it simmer for 5 minutes, adjusting the heat to prevent boiling.
Combining
  1. Remove the saucepan from the heat and stir in the vodka immediately.
Steeping
  1. Cover the pan and let the mixture steep at room temperature for at least 2 hours, or up to 24 hours.
Straining
  1. Strain the liquid through a fine sieve or cheesecloth to remove spice bits, citrus peel, and vanilla pod.
Bottling
  1. Pour the strained liqueur into sterilized bottles and seal them tightly.
  2. Store sealed bottles at room temperature for up to 1 year or in the refrigerator after opening for up to 1 month.

Notes

Serve hot or chilled. If the flavor seems too strong, you can dilute it a little before serving. Avoid boiling the mixture and adding vodka while still hot. Taste before bottling, steep no longer than 24 hours.
