  • 4 large eggs To bind the curd

For Assembly
  • 1 pre-made tart shell Or individual tartlet shells

Method
 

Preparation
  1. In a saucepan, combine lemon juice, sugar, and lemon zest. Stir well to mix the ingredients together.
  2. Whisk in the eggs until fully integrated.
  3. Place the saucepan over medium heat. Continuously stir for about 10 minutes until the mixture thickens.
  4. Remove the saucepan from the heat and stir in butter until completely melted and smooth.
  5. Pour the lemon curd into the cooled tart shell or individual tartlet shells.
  6. Refrigerate for at least 2 hours to set properly.
  7. Before serving, dust with powdered sugar if desired.

Notes

For storage, keep in the refrigerator for up to 5 days. You can freeze the unfilled tart shell for up to 2 months and the lemon curd separately for up to 3 months.
