Preparation
  1. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add the shrimp to the skillet. Season them with salt, pepper, and optional red pepper flakes. Cook until the shrimp turn pink and opaque, which will take about 3-4 minutes.
  3. Pour in the chicken broth and freshly squeezed lemon juice. Stir everything to combine. Allow the mixture to simmer for an additional 2-3 minutes.
  4. Once the broth is simmering, add the zucchini noodles to the skillet. Toss them gently to coat in the sauce. Cook for just an additional 2-3 minutes, or until the noodles are slightly tender but still have a nice bite.
  5. Remove the skillet from heat. Garnish your dish with freshly chopped parsley. Serve immediately.
