Preparation
- Generously season the short ribs with salt and pepper.
- Heat a Dutch oven over medium-high heat and sear the short ribs until browned on all sides for about 8 minutes. Remove and set aside.
- In the same pot, add the chopped carrots, parsnip, and onion. Sauté for about 5 minutes until they soften.
- Stir in the tomato paste and cook for another minute to enhance the flavors.
Braising
- Pour in the Malbec wine and beef broth, scraping the bottom of the pot to release browned bits for added flavor.
- Return the seared short ribs to the pot and add fresh thyme.
- Cover the Dutch oven with a lid and place it in a preheated oven at 325°F (163°C).
- Braise for 2.5 to 3 hours, until the meat is fork-tender and pulls away from the bone.
Serving
- Carefully remove the pot from the oven and serve the short ribs with creamy mashed potatoes.
- Pair with a glass of Malbec wine for a perfect experience.
Notes
Storage: Keep in the fridge for up to 3 days in an airtight container. Can be frozen for up to 3 months. Reheat using low heat on the stovetop or microwave.
