  1. In a bowl or jar, start by combining rolled oats, almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt.
  2. Stir the mixture well to ensure everything is evenly combined. The rolled oats should be fully submerged in the liquid, and the chia seeds should be evenly distributed.
  3. Next, fold in the chopped pecans. Give it another mix to incorporate the nuts throughout the oat mixture.
  4. Cover your bowl or jar and place it in the refrigerator overnight.
  5. In the morning, take your mixture out of the refrigerator and stir well to redistribute the ingredients.
  6. If the oats seem too thick, add a splash more of your chosen milk to reach your desired consistency.
  7. Serve your overnight oats cold, topped with additional pecans and a drizzle of maple syrup if desired.

Notes

Store leftovers in the fridge for up to 5 days. Consider pairing with fresh fruit or Greek yogurt for added freshness and flavor.
