  1. Heat a skillet over medium heat and add the turkey sausage. Cook until browned, breaking it into smaller pieces; about 5 to 7 minutes.
  2. Add diced bell peppers and onions to the skillet and sauté until tender, about 3 to 5 minutes.
  3. In a bowl, whisk the eggs and then pour them into the skillet, stirring gently until just set, taking about 3-4 minutes.
  4. Layer meal prep containers with a layer of black beans, followed by the turkey sausage and egg mixture.
  5. Top the mixture with shredded cheddar cheese, slices of avocado, and a dollop of salsa.
  6. Serve in bowls or wrap in tortillas. Seal containers for storage if prepping ahead.
