Ingredients
  

For the Tzatziki Sauce
  • 1 cup yogurt (Greek or plain) Can use dairy-free yogurt for a lactose-free option.
  • 1 cup cucumber, finely chopped Ensure to strain excess moisture.
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced Use garlic powder as a substitute if needed.
  • 1 tablespoon fresh dill, chopped Can substitute with dried dill or mint.
  • 1 pinch salt To taste.
  • 1 pinch pepper To taste.
For the Bowl
  • 1 cup cooked rice Can substitute with quinoa or couscous.
  • 2 pieces chicken breasts, grilled and sliced Use skinless, boneless chicken for best results.
  • 1 cup cucumber, finely chopped
  • 1 cup cherry tomatoes, halved For garnish.
  • 1 handful Kalamata olives For garnish.

Method
 

Making Tzatziki Sauce
  1. In a bowl, combine the yogurt, finely chopped cucumber, minced garlic, olive oil, lemon juice, dill, salt, and pepper. Stir well until smooth and evenly blended.
  2. Taste and adjust the seasoning if needed.
Assembling the Bowl
  1. In individual serving bowls, layer a base of cooked rice, spreading it evenly.
  2. Top the rice with slices of grilled chicken, ensuring each serving has a generous amount.
  3. Drizzle the prepared tzatziki sauce over the chicken and rice.
  4. Garnish with halved cherry tomatoes and Kalamata olives.
  5. Serve immediately, cold or at room temperature.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Freeze chicken and rice separately from tzatziki sauce for longer storage.
