Dressing

Method
 

Preparation
  1. Drain and rinse the chickpeas under cold water and set aside.
  2. Dice the cucumber into bite-sized pieces.
  3. Chop the red onion finely.
  4. Halve the cherry tomatoes and chop the parsley.
Combine
  1. In a large bowl, combine the chickpeas, diced cucumber, chopped red onion, halved cherry tomatoes, chopped parsley, and crumbled feta cheese. Toss gently to mix.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Dress the Salad
  1. Pour the dressing over the salad and toss gently to coat.
Chill and Serve
