  • 1 lb ground beef Look for 80% lean beef for best flavor.
  • 2 medium potatoes, diced Regular or sweet potatoes can be used.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth Can substitute with chicken broth if desired.
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste as needed salt and pepper Season to taste.
  • 1/4 cup fresh cilantro, chopped Add before serving for freshness.
  • as needed wedge lime for serving Enhances the flavor when squeezed over soup.

Preparation
  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onions and minced garlic to the pot. Sauté until the onions become translucent, about 3-5 minutes.
  3. Stir in the diced potatoes, beef broth, diced tomatoes, cumin, chili powder, salt, and pepper. Mix well.
Cooking
  1. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for about 20-25 minutes, stirring occasionally, until the potatoes are tender.
Finishing Touches
  1. Stir in the chopped cilantro just before serving.
  2. Ladle the soup into bowls and serve with lime wedges on the side.

Notes
