  • 1 large apple Sliced, can substitute with pear.
  • 1/4 cup crumbled feta Can substitute with goat cheese or dairy-free alternative.
  • 1/4 cup toasted walnuts Can substitute with pecans or sunflower seeds.
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Method
 

Preparation
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, and Dijon mustard until thoroughly blended. Set aside.
  2. On a large serving platter, arrange the mixed greens evenly.
  3. Carefully spoon the cooked lentils, sliced apple, crumbled feta, and toasted walnuts over the greens.
  4. Drizzle the dressing over the salad right before serving.
  5. Gently toss the salad to combine all ingredients and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For best results, reheat lentils separately on the stovetop or microwave if necessary. Watch out for overcooking the lentils, and always toss gently to avoid crushing ingredients.
