Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until smooth.
- In another bowl, mix the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in the chocolate chips evenly throughout the batter.
Baking
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes.
- Check for doneness with a toothpick; it should come out clean or with a few crumbs.
- Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
For best storage, keep in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months. Reheat individual slices in a toaster oven or microwave for best results.
