Ingredients

For the Blueberry Syrup
  • 2 cups fresh or frozen blueberries Choose plump, deep-colored blueberries.
  • 3/4 cup granulated sugar Can be substituted with honey or maple syrup.
  • 1/2 cup water
  • 1 tbsp fresh lemon juice Can be replaced with lime juice.
For the Snow
  • 8 cups finely shaved ice Can be made in a blender, food processor, or shaved ice machine.
For Garnish
  • 1/4 cup fresh blueberries For topping.
  • 6 pieces small black licorice Cut into wing shapes for a 'Mothman wing' garnish.
  • edible silver glitter or luster dust Optional for a moonlit shimmer.

Method

Cook the Blueberry Syrup
  1. Add the blueberries, sugar, water, and lemon juice to a medium saucepan set over medium heat. Bring the mixture to a simmer, then cook for 8 to 10 minutes, stirring now and then, and gently mashing the berries.
Strain and Chill
  1. Remove the pan from the heat and strain the syrup through a fine-mesh sieve into a heatproof bowl. Press on the solids to extract as much liquid as possible, then let the syrup cool for about 30 minutes before refrigerating for 1 hour until fully chilled.
Make the Shaved Ice
  1. While the syrup chills, prepare the ice by pulsing ice cubes in a high-powered blender until they look finely shaved and snow-like.
Assemble the Snow Cones
  1. Pack the shaved ice firmly into 6 snow cone cups or small paper cups, shaping each into a tall dome, and drizzle the chilled syrup generously over each.
Add the Garnish and Serve
  1. Top each snow cone with fresh blueberries, tuck in a black licorice wing piece, and lightly dust with edible glitter if desired. Serve immediately.

Notes

Ensure the blueberry syrup is fully chilled before assembling the snow cones. Assemble right before serving as they begin to melt quickly.
