  • 12 pieces jalapeños (halved, seeded) Choose firm, glossy peppers.
  • 8 oz cream cheese (softened) Use dairy-free for a lactose-free version.
  • 1 cup shredded cheddar Can substitute with mozzarella.
  • 6 slices bacon (cut in thin strips) Turkey bacon or pancetta can be used as alternatives.
  • 1 tsp garlic powder Fresh minced garlic can replace for a robust flavor.
  • as needed pieces Candy eyes or small olive pieces for eyes For a healthier option, consider small cherry tomatoes.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar, and garlic powder. Mix until smooth and well-combined.
Assembly
  1. Take each halved jalapeño and fill it generously with the cream cheese mixture.
  2. Wrap the thin strips of bacon crisscross over each stuffed jalapeño half, leaving a small space at the top for the eyes.
  3. Place the wrapped jalapeños on a lined baking sheet, spaced out for even cooking.
Baking
  1. Bake in the preheated oven for 20 to 25 minutes, ensuring the bacon gets crispy and the jalapeños become tender.
Finishing Touch
  1. Once out of the oven, add candy eyes or small olive pieces in the gaps at the top of the jalapeños while they are still warm.
  2. Serve immediately for the best flavor experience.

Notes

These poppers can be served with a light spinach salad or ranch dip. They also store well in the fridge for 3-4 days or can be frozen for up to 2 months.
