Preparation
- Begin by lining an 8×8-inch baking pan with parchment paper, ensuring there's some overhang on the sides for easy removal.
- In a large bowl, combine graham cracker crumbs, 1 cup of creamy peanut butter, melted butter, powdered sugar, vanilla extract, and salt. Mix until well combined, ensuring there are no dry crumbs.
- Firmly and evenly press the mixture into the bottom of the prepared baking pan.
- In a microwave-safe bowl, combine semisweet chocolate chips and the extra 2 tablespoons of creamy peanut butter. Heat in 30-second intervals, stirring between each, until smooth (about 90 seconds).
- Carefully pour the melted chocolate mixture over the pressed peanut butter layer and spread it evenly.
- Optional: Sprinkle flaky sea salt on top. Place the pan uncovered in the refrigerator and let chill for at least 1 hour, or until chocolate is fully set.
- Once set, lift the bars out using the parchment overhang and cut into 16 squares. Store leftovers in an airtight container in the refrigerator for up to a week.
Notes
These bars can be customized with various toppings, and are great for potlucks or cozy nights in. Store them in an airtight container in the refrigerator for freshness.
