Ingredients

For the Rum Balls
  • 2 cups vanilla wafer cookies, finely crushed into crumbs Use fresh, crisp cookies for best texture.
  • 1 cup powdered sugar, sifted, plus 1/2 cup for rolling
  • 1 cup walnuts or pecans, finely chopped Choose based on preferred flavor.
  • 3 tablespoons unsweetened cocoa powder
  • 1/4 cup dark rum Can substitute with spiced rum for a different taste.
  • 3 tablespoons light corn syrup Can substitute with honey or maple syrup.
For Rolling
  • 1/2 cup powdered sugar For coating.
  • 1/2 cup finely chopped nuts Optional alternative coating.
  • 1/4 cup cocoa powder Optional alternative coating.

Method

Preparation
  1. In a large bowl, combine the crushed vanilla wafer crumbs, 1 cup powdered sugar, chopped walnuts or pecans, and cocoa powder. Stir well so everything blends evenly.
  2. In a small bowl, whisk together the dark rum and corn syrup until smooth and well combined.
  3. Pour the rum mixture into the crumb mixture, then stir thoroughly with a sturdy spoon until everything is evenly moistened. Adjust texture if necessary.
  4. Using a small cookie scoop or a tablespoon, portion the mixture and roll each portion firmly between your palms into a smooth ball about 1 inch in diameter.
Coating and Chilling
  1. Roll each ball in the remaining powdered sugar, or in finely chopped nuts or cocoa powder for variety, coating completely.
  2. Place the finished rum balls on a parchment-lined tray or plate, then refrigerate for at least 2 hours, or until firm.
Serving or Storing
  1. Arrange the chilled rum balls on a holiday platter or pack them into decorative tins for gifting.
  2. Store them in an airtight container in the refrigerator for up to 3 weeks, or at cool room temperature for up to 1 week.
  3. Re-roll in fresh powdered sugar if needed before serving.

Notes

These rum balls improve in flavor after a day or two in the fridge. Ensure to use finely crushed cookies for the best texture and remember to refrigerate them for proper firmness.
