Ingredients

Crust
  • 1 each refrigerated or thawed frozen 9-inch pie crust Make sure it is cool but flexible.
  • 1 tablespoon all-purpose flour For dusting the pie plate and crust.
Filling
  • 1/2 cup unsalted butter, melted Can substitute with salted butter.
  • 1 cup packed light brown sugar Dark brown sugar can be used for a deeper flavor.
  • 4 large eggs Ensure they are beaten smooth.
  • 2 tablespoons cornmeal Adds body to the filling.
  • 1 tablespoon all-purpose flour Used in the filling.
  • 1 tablespoon white vinegar Can substitute with apple cider vinegar.
  • 1 tablespoon vanilla extract Adds flavor.
To Serve (optional)
  • 1 cup whipped cream For topping.

Method

Preparation
  1. Heat the oven to 350°F (175°C). Let the pie crust sit for a few minutes if it's cold, so it softens slightly.
  2. Dust a 9-inch pie plate and both sides of the crust lightly with flour. Fit the crust into the plate and crimp the edges as desired.
Mixing the Filling
  1. In a large bowl, stir together the melted butter, light brown sugar, cornmeal, flour, vinegar, and vanilla until combined and glossy.
  2. Beat in the eggs until the filling is smooth and well mixed.
Baking
  1. Pour the filling into the prepared crust and spread evenly. Bake for 30 to 35 minutes, checking the edges at the 15-minute mark and covering with foil strips if they brown too fast.
  2. The pie is done when the filling is set but still has a slight wobble in the center.
Cooling and Serving
  1. Cool the pie for at least 15 minutes before slicing. Serve as is, or top with whipped cream if desired.
