Preparation
- Heat your oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, beat the butter, brown sugar, and granulated sugar until fluffy and lighter in color.
- Add the eggs and vanilla, mixing until smooth.
- In a separate bowl, stir together the flour, baking soda, cinnamon, and salt.
- Add the dry mix to the wet mix and stir just until combined, without seeing streaks of flour.
- Stir in the oats, then fold in the raisins and optional nuts.
Baking
- Scoop about 2 tablespoons of dough onto the baking sheets, spaced a couple of inches apart.
- Bake for 9 to 11 minutes, pulling them out when the edges look set and the centers are slightly soft.
- Let them sit on the baking sheet for about 5 minutes before transferring to a cooling rack or plate.
Notes
For extra soft cookies, do not overbake. Store in an airtight container with a slice of bread to maintain softness.
