- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
- Next, add the diced chicken to the pot. Season it with salt and pepper. Cook until browned, about 5-7 minutes.
- Once the chicken has browned, stir in the sliced mushrooms and broccoli florets. Cook for an additional 3-5 minutes.
- Add the uncooked rice and chicken broth to the pot. Stir well to combine all ingredients. Bring the mixture to a boil, then reduce the heat. Cover the pot and let it simmer for about 20 minutes.
- Remove the pot from heat. Stir in the shredded cheddar cheese until melted and creamy.
- Serve warm and enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat on the stovetop or microwave, adding a little broth or water if necessary.
