  • 1 pound chicken breasts, diced Select high-quality fresh chicken.
  • 1 cup broccoli florets Fresh or frozen can be used.
  • 1 cup mushrooms, sliced Use any variety you prefer.
  • 1 cup rice, uncooked White rice recommended but brown rice can be used with longer cooking time.
  • 2 cups chicken broth Use vegetable broth for a vegetarian version.
  • 1 cup cheddar cheese, shredded Mozzarella or vegan cheese can be substituted.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
  2. Next, add the diced chicken to the pot. Season it with salt and pepper. Cook until browned, about 5-7 minutes.
  3. Once the chicken has browned, stir in the sliced mushrooms and broccoli florets. Cook for an additional 3-5 minutes.
  4. Add the uncooked rice and chicken broth to the pot. Stir well to combine all ingredients. Bring the mixture to a boil, then reduce the heat. Cover the pot and let it simmer for about 20 minutes.
  5. Remove the pot from heat. Stir in the shredded cheddar cheese until melted and creamy.
  6. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat on the stovetop or microwave, adding a little broth or water if necessary.
