Preparation
- Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Add the diced yellow onion and cook for about 4 minutes until soft and translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant. Be careful not to brown the garlic.
Cooking
- Stir in the crushed tomatoes, vegetable broth, Italian seasoning, kosher salt, and red pepper flakes. Bring the mixture to a gentle boil.
- Add the cheese tortellini directly into the pot and reduce the heat to a simmer. Cook for 8 to 10 minutes, stirring occasionally, until the tortellini is tender.
- Stir in the heavy cream and grated Parmesan cheese. Let simmer for 2 to 3 minutes until the sauce thickens.
- Add the fresh baby spinach and gently fold it in until wilted.
- Spoon the creamy tomato tortellini into bowls and garnish with torn basil and extra Parmesan cheese before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat gently, adding a splash of broth to loosen the sauce if needed.
