  • 1/3 cup chia seeds Rich in omega-3 fatty acids and fiber.
  • 1.5 cups unsweetened almond milk Dairy-free alternative.
  • 1 tbsp maple syrup For sweetness.
  • 1 tsp pure vanilla extract Enhances flavor.
  • 1/8 tsp salt Enhances flavors.
Toppings
  • 1/2 cup fresh mixed berries For topping.
  • 1 tbsp sliced almonds For topping.
  • 1 tsp honey Optional drizzle before serving.

Preparation
  1. In a medium bowl or jar, whisk together the almond milk, maple syrup, vanilla extract, and salt until fully combined.
  2. Add the chia seeds into the mixture and whisk vigorously for about 30 seconds to ensure no clumps form.
  3. Allow the mixture to sit for 5 minutes, then whisk again to break up any clumps that may have formed.
  4. Cover the bowl or jar and place it in the refrigerator. Let it chill for at least 4 hours, or overnight, until it thickens into a pudding-like consistency.
Serving
  1. Before serving, stir the pudding to loosen it. If it appears too thick, gently mix in a splash of almond milk until you achieve your desired texture.
  2. Divide the pudding into two glasses or jars. Top with fresh mixed berries and sliced almonds. If desired, drizzle with honey before enjoying chilled.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Freezing is not recommended due to texture change.
