  • 2 to 3 pieces ripe peaches, sliced (skin on is fine) Make sure they are fragrant and slightly soft.
  • 3 to 4 pieces heirloom tomatoes, sliced or cut into wedges Use a mix of colors for visual appeal.
  • 1 small shallot, thinly sliced Optional, adds great flavor.
  • A handful fresh basil leaves Add just before serving.
  • 2 to 3 tablespoons extra virgin olive oil Adjust to taste.
  • 1 tablespoon balsamic vinegar or balsamic glaze Use a drizzle for added flavor.
  • to taste flaky salt or kosher salt Enhances the sweetness of the peaches.
  • to taste fresh cracked black pepper

Method
 

Preparation
  1. Slice the peaches and tomatoes and add them to a wide bowl or platter.
  2. Scatter the shallot on top if you are using it.
  3. Tear the basil with your hands and add it right before dressing to prevent bruising.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Finish with salt and pepper, then taste and adjust as necessary.
  6. Let it sit for 5 to 10 minutes so the juices mingle, then serve.

Notes

For best flavors, do not chill the salad for long; room temperature tomatoes and peaches taste best. Use fresh, ripe ingredients for maximum flavor.
