Ingredients

For the Crust
  • 1.5 cups all-purpose flour Can substitute with whole wheat or gluten-free flour.
  • 0.5 cups cold butter, cubed Ensure butter is cold for a flaky crust.
  • 2 tablespoons sugar
  • 1 pinch salt
For the Filling
  • 4 pieces pears, sliced Use firm varieties like Bartlett or Bosc.
  • 1/3 cups honey Can be substituted with maple syrup or agave nectar.
  • 1 teaspoon vanilla extract Use non-dairy extract for vegan option.
  • 0.5 cups sliced almonds Can substitute with walnuts or pecans.

Method

Make the Crust
  1. Pulse flour, cold butter, sugar, and a pinch of salt in a food processor until the mixture looks crumbly.
  2. Add ice water one tablespoon at a time, pulsing after each addition, until the dough begins to come together. Be careful not to add too much water.
  3. Wrap the dough in plastic and chill it in the fridge for 30 minutes.
Preheat Oven and Prepare Tart Pan
  1. Preheat your oven to 375°F.
  2. Lightly flour a clean surface, then roll out the chilled dough to fit a 9-inch tart pan.
  3. Transfer the dough into the pan, pressing gently into the bottom and sides. Trim any excess dough from the edges.
Arrange Pears and Add Flavorings
  1. Fan the sliced pears evenly over the crust, overlapping them slightly.
  2. Drizzle the honey and vanilla extract over the pears.
  3. Sprinkle the sliced almonds on top.
Bake the Tart
  1. Place your tart on the middle rack and bake for 35 to 40 minutes, or until the crust is golden and the pears are tender.
  2. Watch the almonds to prevent burning. Cover edges with foil if needed.
Cool and Serve
  1. Once baked, remove the tart from the oven and allow it to cool for at least 15 minutes before slicing.
  2. Serve warm or at room temperature.

Notes
