Ingredients
  

For the Shortbread Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
For the Pecan Filling
  • 1 cup chopped pecans Fresh pecans are best for flavor.
  • 1 cup light corn syrup
  • 3/4 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the flour and 1/4 teaspoon of salt, mixing until the dough is crumbly. Press this mixture evenly into the bottom of your prepared baking pan.
  4. Place the pan in the preheated oven and bake for about 15-20 minutes or until the crust is lightly golden.
Filling Preparation
  1. While the crust is baking, whisk together corn syrup, brown sugar, eggs, vanilla, and the remaining salt in a bowl.
  2. Stir in the chopped pecans to combine everything well.
Combine and Final Baking
  1. Once the crust is done, carefully pour the pecan mixture over the baked crust, spreading it evenly.
  2. Return the pan to the oven and bake for an additional 25-30 minutes or until the filling is set.
Cooling and Serving
  1. After baking, let the pan cool completely at room temperature.
  2. Once cool, cut into bars and enjoy!

Notes

These pecan pie bars can be served with vanilla ice cream or whipped cream for added indulgence. Store in the refrigerator for up to 5 days or freeze for up to three months.
