Method
Preparation
- In a large bowl, beat the softened butter, light corn syrup, and peppermint extract until smooth.
- Gradually add the powdered sugar and mix on low until combined, then knead by hand until the dough comes together.
- Dust a sheet of parchment paper with powdered sugar, then knead the dough into a ball.
- Roll the dough out to about 1/4 inch thick, using more parchment if necessary to prevent sticking.
- Cut the dough into rounds using a 1 1/4 to 1 1/2-inch cutter and reroll scraps as needed.
Freezing
- Place the cut peppermint patties on a parchment-lined tray and freeze for 15 to 20 minutes until firm.
Dipping in Chocolate
- Melt the chopped semi-sweet chocolate in a microwave-safe bowl in 20 to 30-second bursts, stirring until smooth.
- Dip each frozen patty into the melted chocolate, coating thoroughly, then tap off excess and place on parchment.
- If patties soften, freeze them for 10 to 15 minutes before continuing to dip.
Setting and Storing
- Refrigerate the dipped patties for 30 to 45 minutes until the chocolate is firm.
- Serve immediately or store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
Notes
These candies are great for gifting and can be made ahead of time. Store them with wax paper between layers to prevent sticking.
