  • 2 lbs pork shoulder Look for a piece with good marbling for tenderness.
  • 1 piece onion, diced
  • 4 cloves garlic, minced
  • 1 tsp cumin Adjust based on taste preference.
  • 1 tsp oregano Adjust based on taste preference.
  • 1 piece orange, juiced Can substitute with lemon juice if unavailable.
  • 1 piece lime, juiced
  • Salt and pepper to taste Do not rush the seasoning.
  • Fresh cilantro, chopped For topping.
  • Lime wedges for serving

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C). Gather all the ingredients.
Cooking
  1. In a large Dutch oven, mix the pork shoulder, diced onion, minced garlic, cumin, oregano, orange juice, and lime juice. Season generously with salt and pepper.
  2. Cover the Dutch oven and place it in the preheated oven. Bake for about three hours, or until it's fork-tender.
  3. Carefully remove the pork from the oven and shred it using two forks.
  4. Optionally, spread the shredded pork on a baking sheet and place it under the broiler for a few minutes for crisp edges, watching closely to avoid burning.
Assembly
  1. Warm the tortillas and fill each with the shredded pork. Top with fresh cilantro and serve with lime wedges.

Notes

This recipe is perfect for meal prepping as the taste improves after a day or two. Store leftovers in an airtight container for up to four days or freeze for up to three months.
