Ingredients

For the Cookie Dough
  • 1 cup unsalted butter, room temperature
  • 1 cup packed brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 cups coarsely crushed salted potato chips (ruffled or wavy work best)
  • 2 cups semisweet chocolate chips, plus a few extra for pressing on top (optional)

Method

Preparation
  1. In a large bowl, beat the butter with both sugars for 2 to 3 minutes until the mixture looks light and fluffy.
  2. Beat in the eggs and vanilla for about 1 minute, just until the mixture looks smooth.
  3. Stir in the flour, baking soda, and salt just until combined. Then gently fold in the crushed potato chips and chocolate chips.
  4. Use a 1 1/2-inch cookie scoop to portion the dough, then roll it into balls that are a little taller than round. Chill for at least 1 hour.
Baking
  1. Preheat oven to 350°F.
  2. Place chilled dough balls about 2 inches apart on parchment paper or a silicone mat.
  3. Bake for about 11 minutes, or until the edges are lightly golden.
  4. Let cool on the pan for 3 to 4 minutes before transferring to a wire rack to cool completely.

Notes

To keep cookies thick, make sure to chill the dough before baking. For optimal texture, use fresh, crisp potato chips and avoid overmixing the dough.
