Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the pumpkin puree and the egg until well combined.
- In a separate bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Scoop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them apart.
Baking
- Bake in the preheated oven for 12-14 minutes until the edges are set and the centers are slightly soft.
- Allow to cool completely before frosting.
Frosting
- In a mixing bowl, beat together the softened cream cheese, 1/4 cup of butter, powdered sugar, and vanilla until smooth and creamy.
- Once the cookies have cooled, generously frost each with the cream cheese frosting.
Notes
These cookies are best stored in an airtight container in the refrigerator for up to one week. They freeze well for up to three months.
