Method
Cooking the Pasta
- Cook the fettuccine according to package directions. Reserve 1/2 cup of pasta water before draining.
Making the Sauce
- In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about one minute until fragrant.
- Whisk in pumpkin puree, heavy cream, and nutmeg. Let simmer for 4-5 minutes until slightly thickened.
- Stir in goat cheese and Parmesan until smooth. Adjust seasoning with salt and pepper.
Combining
- Add the cooked fettuccine to the sauce in the skillet and toss to coat. Add reserved pasta water as needed.
Serving
- Transfer to serving plates and top with crispy sage and toasted walnuts. Enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Can freeze for up to 2 months without toppings. Reheat gently on the stovetop.
