  • 1/2 cup milk Almond, oat, or soy milk can be used for a dairy-free option.
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • to taste maple syrup for serving Can be substituted with agave nectar or honey.
  • as needed butter or oil for cooking Coconut oil or ghee can be used instead of butter.

Method
 

Preparation
  1. In a mixing bowl, whisk together the pumpkin puree, eggs, milk, cinnamon, nutmeg, and vanilla extract until smooth.
Cooking
  1. Heat a skillet over medium heat and add butter or oil, ensuring it coats the bottom of the pan.
  2. Dip each slice of bread into the pumpkin mixture, ensuring both sides are well-coated.
  3. Place the coated bread in the skillet and cook for about 2-3 minutes on each side until golden brown.
Serving
  1. Remove the French toast from the skillet and serve warm, drizzled with maple syrup.

Notes

Watch out for overcooking and ensure slices are thoroughly coated. Store leftovers in an airtight container for up to 3 days or freeze slices for up to 2 months.
